Keto Organic Lemon Pound Cake

I love this recipe! If you like lemon, you will love this recipe! Great for breakfast and special occasions. It's adapted from the alldayidreamaboutfood.com website for lemon poppyseed cake. I tweaked some of the ingredients and removed the poppyseeds to create this all around wonderful poundcake to share with friends.
Cook Time: 45-50 minutes
Cool Time: 25 minutes
3/4 Cup Coconut Flour
1/3 Cup Unflavored Egg White Protein Powder
2 teaspoons Sea Salt
1/3 Cup Butter flavored Coconut Oil
1/2 Cup Swerve (or other natural sugar substitute)
3 Large Eggs
Zest of 2 Organic Lemons
Juice of 2 Organic Lemons
1 teaspoon Vanilla Extract
1 Cup of Water
1. In a bowl whisk flour, egg white protein, baking powder & sea salt
2. In another bowl, cream butter, Swerve, eggs, lemon zest, lemon juice, vanilla extract, and water
3. Blend the dry ingredients into the wet.
4. Bake at 350º for 45-50 minutes, until toothpick comes out clean.
5. Cool for 25 minutes
Top with fresh berries & coconut whipping cream -- lovely!
